Blue by Eric Ripert (Grand Cayman, Cayman Islands)

The only AAA Five Diamond Restaurant in the Caribbean, Blue did not disappoint. By the same chef and owner of Le Bernadin, the seafood was exquisite. The amuse bouche was lobster with a mango sorbet/froth on top. For an appetizer, we had the Carpaccio of Warm Caribbean Lobster, Citrus Vinaigrette, and Hearts of Palm. For entrees, we had the Red Snapper with Spicy-Sour Puerto Rican Sancocho Broth, Sweet Potato, Plantain and Avocado and the Halibut in a ginger-soy broth. The desserts were a Trio of Chocolate: Warm Chocolate Cake, Chocolate Pot Au Crème, Malted Chocolate Ice Cream, and Sticky Toffee Pudding.
