Pitmaster Pete Daversa worked for a decade in the IT industry before surrendering to his lifelong passion for cooking up 'cue.  He enrolled in culinary school and spent two years working int he kitchen at Blue Smoke before moving to Hill Country, where he smokes brisket, sausage, ribs, and other meats over Texan oak in true Texas Hill Country style.
