The Pit @ Big Apple BBQ (NY, NY)

North Carolina pitmaster Ed Mitchell has been cooking ribs commercially since 1992.  His family's long-standing reputation for cooking fantastic Eastern North Carolina style 'cue was greatly elevated with the opening of Mitchell's Ribs, Chick & BBQ in Wilson, NC.  In 2007, he opened The Pit in Raleigh, NC, specializing in whole hogs.
